Broccoli Salad with Coconut Bacon - Supper With Michelle

 

This simple Broccoli Salad with Coconut Bacon is slightly sweet, with a nice crunch, and with the addition of my coconut bacon, it has a little bit of that salty smoky flavor. You can make this salad ahead of time, but I would not recommend adding the coconut bacon into the salad until you’re actually ready to eat it because it will get soggy after a while.

The other thing about this salad is that you can use vegan mayonnaise or regular mayonnaise. I chose to make this recipe vegan, but again you have the option to do as you prefer.

The salad is simple to make vegan if you choose. Just use vegan mayo and non-dairy milk. Lastly, I added in some golden raisins because they seem a bit sweeter than your regular raisin and then almond slices for that extra added crunch.

I love broccoli, but if I eat it raw, this is by far one my favorite ways to enjoy it. Add it to your table as a small side dish and enjoy!

Ingredients

  • 3 tablespoons mayonnaise, or vegan mayonnaise
  • 1 tablespoon whole milk, or unsweetened non-dairy milk
  • 1 teaspoon maple syrup, pure grade A
  • 2 small broccoli crowns, cut into bite size pieces
  • ¼ cup golden raisins
  • 3 tablespoons almonds, sliced
  • ¼ cup coconut bacon, or more if you'd like
  • salt and pepper, to taste

Instructions

  • In a large bowl, combine the mayonnaise, milk, and maple syrup.
  • Stir in the broccoli, raisins, and almonds until combined.
  • When you're ready to serve, lightly fold in your coconut bacon. Taste and add salt and pepper, if you find it necessary.
  • Enjoy!
