This simple Broccoli Salad is slightly sweet, with a nice crunch, and with the addition of my coconut bacon, it has a little bit of that salty smoky flavor. You can make this salad ahead of time, but I would not recommend adding the coconut bacon into the salad until you’re actually ready to eat it because it will get soggy after a while. The other thing about this salad is that you can use dairy or non-dairy milk or mayonnaise. I chose to make this recipe vegan, but again you have the option to do as you prefer. Lastly, I added in some golden raisins because they seem a bit sweeter than your regular raisin and then almond slices for that extra added crunch. I love broccoli, but if I eat it raw, this is by far one my favorite ways to eat it. Add it to your table as a small side dish and enjoy!
Recipe: Serves 2 – 3
2 small Crowns of Broccoli (hard stems removed and cut into small bite size pieces)
3 tablespoons of Vegan Mayonnaise (can be substituted for non-vegans)
1 tablespoon of Non-Dairy Milk (I used unsweetened Almond Milk)
1/4 cup of Golden Raisins
1 teaspoon of Pure Grade A Maple Syrup (can be substituted with Agave Nectar or Honey)
2 – 3 tablespoons of Almond Slices
1/4 cup or more of Coconut Bacon (add in once you’re ready to serve)
Sea Salt/Pepper (optional to taste)
In a medium bowl combine the vegan mayo, non-dairy milk, and maple syrup. Then add in broccoli, raisins, and almonds and stir until all of your ingredients are combined. When you’re ready to serve, lightly fold in your coconut bacon. Taste and add salt/pepper if you find necessary and enjoy!
