Mediterranean Inspired Kale Salad - Supper With Michelle


A couple weeks ago, I met a girlfriend for lunch at the Cheesecake Factory restaurant and I ordered their Falafel Kale Salad. Well ever since then, I’ve been craving a Mediterranean Inspired Kale Salad.  This doesn’t have any falafels, but it is a fairly simply salad. I like to serve mine with a dollop of Hummus on the side and I also enjoy taking either store bought Pita Chips and crumbling them on top for a little crunch or serving warm Pita Bread on the side. You can also add some Chickpeas or even Bulgar Wheat into this salad for some different options.  The dressing is a pretty classic dressing and you can use either Lemon Juice or Red Wine Vinegar if you choose. This salad is best served fresh.


Mediterranean Inspired Kale Salad - Supper With Michelle


Recipe: Serves 2


4 cups of Kale (Cleaned/Removed from Stem/Cut thin)

2 cups of Romaine Lettuce (Cut thin)

1/2 cup of Kalamata Olives

1/2 cup of Cherry Tomatoes (sliced)

1/2 of a Small Cucumber (Sliced)

A few slices of a Red Onion (Really Thin)

2 – 3 tablespoons of Feta Cheese


For the Dressing:

2 1/2 tablespoons of Olive Oil

1 1/2 – 2 tablespoons of Red Wine Vinegar

1/2 teaspoon of Dijon Mustard

1/2 teaspoon of Garlic Powder

1/4 teaspoon of Onion Powder

1/4 teaspoon of Sea Salt

1/4 teaspoon of Ground Black Pepper

1/2 teaspoon of Dried Oregano

1/2 teaspoon of Dried Basil

In a small bowl, mix the ingredients for your dressing. Taste and add salt/pepper, if needed. In a large mixing bowl, add your kale, romaine lettuce, and dressing and mix well together. Then lightly stir in the rest of your ingredients. Serve and top with Pita Chips or serve with warm Pita Bread if you like. Enjoy!
