Mediterranean Inspired Kale Salad

For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- ½ teaspoon Dijon mustard
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon fine sea salt, or to taste
- ¼ teaspoon ground black pepper, or to taste
- ½ teaspoon dried oregano
- ½ teaspoon dried basil
For the salad:
- 4 cups kale, thinly sliced
- 2 cups romaine lettuce, thinly sliced
- ½ cup pitted kalamata olives
- ½ cup cherry tomatoes, halved
- ½ small cucumber, thinly sliced
- ⅛⅛ cup red onion, thinly sliced
- 2 to 3 tablespoons feta cheese, or vegan feta cheese
Optional Toppings:
- pita chips, crumbled
- or warm pita bread
Prepare the salad:
In a large mixing bowl, add the kale, romaine lettuce, and dressing and mix well together. Then lightly toss in the rest of your ingredients.
Serve and top with some crumbled pita chips on top or warm pita bread alongside, if using. Enjoy!
