This “bruschetta-ish” cottage cheese toast will be on repeat in my house until further notice. 🙂 Yep…I said it. And I know some of you are thinking… this is NOT the bruschetta I know and love Michelle. And….you’re right. This is definitely not traditional bruschetta. However, it’s outrageously delicious in my opinion and after one bite…I think you may agree with me. 

Believe it or not, it works REALLY well with cottage cheese. And while we’re on the subject of cottage cheese, any will do, but my favorite is made by Good Culture. As for those of you non-cottage cheese lovers out there, burrata or fresh mozzarella are great substitutes, if you’re still wanting a cheesy situation.

For this recipe, I use a balsamic glaze/reduction for the topping, rather than using vinegar in the mixture. You can either use a store-bought glaze or you can make it yourself (my simple recipe for it, is in my cookbook on page 64). And of course, this will be perfect for those vine-ripe tomatoes in the warmer months. But, please don’t wait until summer to make this. You can find really good varieties of tomatoes in most markets now days all year round. Lastly, any type of bread will work with this toasty situation. I prefer one that has a larger surface, but use what you like.

Now, this comes together rather quickly, making it ideal for a rather quick breakfast or snack or whenever you desire it throughout the day. I definitely hope you give this a try!

Ingredients

  • 1 to 2 slices bread, depending on size

For the “bruschetta”:

  • ½ cup tomatoes, diced
  • 1 tablespoon red onions, minced
  • A drizzle of olive oil
  • 6 medium basil leaves, depending on size, chiffonade
  • 1 small clove garlic, minced
  • salt and pepper, to taste

For the topping:

  • 2 to 3 tablespoons cottage cheese, such as Good Culture
  • A good drizzle balsamic glaze, or reduction

Equipment

  • Cutting Board
  • Chef's Knife

Instructions

Toast your Bread:

  • Toast your bread and set it to the side on a plate. (I like to rub the toast with part of the garlic clove and mince up the rest of the garlic to go in the bruschetta)

Make the "Bruschetta":

  • In a small bowl combine the ingredients for the bruschetta and give it a stir.

Assemble Toast:

  • Smear the cottage cheese on top of the toast.
  • Spoon the bruschetta over the cottage cheese. Drizzle with the balsamic glaze and thank me later! Enjoy!
