Jamaican Curry Kale Salad

 

After over indulging a little last week, I woke up Sunday morning with a desire for a big salad. Kale is one of those leafy greens that I could probably eat almost everyday. It’s reasonably inexpensive and not to mention, good for you. So I’m certain this will not be my last “Kale Salad” type of recipe that I will share with you all because I have plenty. For this salad, I went with an islandy type of flavoring. I added a little curry powder to it, but trust me, the taste of curry is not overbearing, so please don’t let that scare you from making this salad. It’s simple and super easy to make and you can add more ingredients if you like, I just used what I had available in the frig.
Recipe: Serves 2 – 3

1 bunch of Kale (cleaned and cut off rib into bite size pieces)
1/2 Red Bell Pepper (diced)
1/2 cup of shredded Carrots
1/2 Yellow Bell Pepper (diced)
A few good drizzles of olive oil (this will be massaged into the leaves of your kale)
1 teaspoon of yellow Jamaican curry (less or more depending on your tastes)
A pinch of red pepper flakes (optional)
1 teaspoon of minced garlic
1 – 2 tablespoon of Nutritional Yeast (more, if you like it creamier)
Sea salt/pepper to taste
A sprinkle of Raw Sliced Almonds (Sunflower seeds, Pumpkin Seeds, and Walnuts are great too.)

Gather all of your ingredients into a big bowl and take both of your clean hands and massage/mix all of your ingredients well together. No, not with a spoon, because it just doesn’t work as well. Then get your fork and plate/bowl and serve up your salad and enjoy!
